Mondongo Picante: Spicy Tripe Stew

Serves 8 people

Ingredients

2 lbs cooked mondongo
1/2 lbs yellow corn kernels
1 tbsp lard
1 tbsp paprika
1/2 lbs potatoes, peeled and cut into long strips
2 medium sized onions, finely chopped
1 green onion, chopped
1 tbsp parsley, chopped
1/2 tbsp sea salt
1/2 cup oil
3 tsp chili powder
3 tsp ground cumin
Necessary quantity of boiling water or broth


Preparation
Chop the "mondongo" into small slices. In a large pot fry the onion in fat and oil. Add the sea salt, spices, mondongo and corn, and stir briefly. Add boiling water to completely cover the mixture, cover the pan and cook over moderate heat for 20 minutes. Add the potatoes and let cook for another 10 or 15 minutes more.

Serve hot garnished with green onion and chopped parsley.
